did you miss out on the initial sourdough craze of the first covid-19 lockdown? or maybe you're looking for some tried-and-true tips to perfect the results of your original 'lockdown loaves?' in this workshop, current hospitality teacher and former restaurant owner andrew mavor will teach you how to bake the perfect loaf of bread, right from scratch. he will outline the ‘science' of baking bread, from enriched loaves to multi-day sourdoughs, and he will even explain how to work with baker’s percentages. after covering the essential bread-baking tools and explaining their uses, andrew will discuss four incredibly versatile basic recipes to get people started on their bread-baking journey.  best of all?  participants will each receive a dry 'starter,' so you can begin your bread-making journey with confidence!

while registration remains open for this workshop, please note that the official registration deadline has now passed and so we cannot guarantee that you will receive your dry starter prior to the workshop.

however, the workshop will be recorded, meaning you can go back and review andrew's instructions on re-hydrating the starter if you receive your starter after the live workshop on the 30th.

are you a chocolate connoisseur? have you ever wondered about the process behind making this delicious, sweet treat? in this workshop, local chocolatier dawn will guide participants through the chocolate-making process, and then invite attendees to participate in a chocolate tasting. each participant will receive a chocolate tasting kit, which includes four different types of chocolate (dark, milk, fruit, and white). dawn, owner and founder of  dwn craft chocolatier, creates hand-crafted chocolate bars and confections featuring local, natural, and carefully selected ingredients. she draws from years of making jams and preserves, and a food career based on the fundamentals of fine dining and local ingredients.

are you a foodie who loves to try new things? are you interested in local and unique flavour combinations?  this workshop will tickle the tastebuds with  ‘wicked’ – a sweeter rub that can also be used to glaze veggies – and the original ‘shumka dust.’ participants will not only receive these two gluten-friendly spice blends, but they will also be sent a video for a zoom cooking demo in which they will learn about how to “dust a little or dust a lot”.  they’ll also get to know the shumka family (kate, scott, and 12-year old jordin) in a follow-up q&a zoom session, and learn about how ‘shumka dust’ came to be a household staple in thunder bay, before becoming available in shops across canada!
