an exploration of contemporary and socio-historical perspectives on food security in rural, northern and indigenous communities. depending on the location and instructor, we will examine contemporary debates on local-global food systems; food charity [food bank] vs. food sovereignty models; the social and health effects of food scarcity and the nutrition transition on well-being and identities; and the role of subsistence activities. we will also investigate responses and resistance strategies to food insecurity

a survey of the study of food through a socio-cultural lens. we will examine the symbolic meanings of food and investigate how food practices intersect with gender, race, social class, age and place. we explore the realtionship of individuals in society to food systems, production and consumption patterns, health, nutrition and the body, the environment, food policy, and food security
